Vegan Waldorf Salad (Serves 4)
The other day I had a weird craving for a Waldorf salad so decided to whip something up. This version is light, vegan, and healthy. It makes for a great summer side or a light lunch.
*One green apple peeled and diced into cubes
*2 celery stalks chopped
*1/2 C chopped walnuts
*1/2 C dried cranberries
*1/2 lemon squeezed
*Dash of salt
*Dash of pepper
*1/3 C Vegan mayo
*1 Tsp Maple syrup
*Add all ingredients into bowl and stir. This lasts about 3-4 days covered in the refrigerator.
