Today I was in the mood for a quick and healthy Meal for lunch. One of my favorite childhood lunches was egg salad sandwiches. This version is packed with protein from the egg and contains phytonutrients from the broccoli sprouts and baby kale. ( no mayonnaise needed! ) I used one egg, but feel free to use two if you want. This will definitely be making it into my regular lunch/ breakfast rotation!
Toast With Greens And Hard Boiled Egg
• GF Toast
•Grass Fed Butter
• Baby Kale
•Broccoli Sprouts
• 1 Hard Boiled Egg
• Salt & Pepper
